One-Pot Chicken Taco Bowl

Hello lovelies! Welcome back to my world. Today I’ll be sharing with you an amazing and super easy dinner idea that you and your family will love.

It is really comforting and warm, more suitable in the winter but in summer it works as well! The aromatic and tender chicken, fresh veggies, mixture of spices, beans, corn, cheese ooooh yumm!

Let’s get to the recipe shall we?

The first step is to dice up some onion and cook it in oil or butter until slightly translucent. Do not brown it.

To the onions add in your sliced chicken.

Can you see how tender the chicken is?? WOW!
To the cooked chicken add in red capsicum (you could substitute for any other color ). This is the stage where you add in your favorite spices and seasonings. I added salt, pepper, cumin, mixed spices, curry powder.
Once your chicken has a golden color, add in soaked and rinsed raw rice on top. Do not mix.
Add in chopped tomatoes to the rice.
Add in canned rinsed corn, or you could use freshly cooked or frozen corn.
Add Beans (I used canned but you could substitute for freshly soaked and cooked).
On top of everything add some grated cheese of your choice. Add in water/broth according to the rice type you’re using and voila!
Top it up with some sour cream and parsley.

CHICKPEA & AVOCADO WRAP

What made me invent this absolutely easy to make yet delicious and oh so nutritious wrap idea is that my hubby goes to office everyday and I can easily run out of ideas for packed healthy lunch.

I think all of us mom’s/wives suffer from this every single day whether it is to pack lunch for your spouse or your children for school. So this idea might scare some men, like it did for my hubby!! We women LOVE avocado on everything with everything. While men don’t really get it, but i think that we can work it out!

So here’s what i did

Drain a can of chickpeas
Mash it up with a fork or however you like
Shred some carrots (i used half a carrot but it depends on the quantity you’re making). You could use all kind of add-ons like corn, peppers, tomato etc. Just don’t make it too wet.
Add an avocado and mash it up as well.
I don’t throw away the avocado pit, I know that avocado plants can be grown from the pit using this method.
For this method, you very carefully peel the ‘skin’ off the pit, gently pierce 3-4 toothpicks and submerge it into water (half of the pit needs to be in contact with water) It does take time to root .. I will record the process on this website.
Back to our filling, after you mix all the ingredients thoroughly squeeze in a dash of fresh lemon juice. (This will prevent the avocado from browning)
Add in salt and some of your favorite spices (i added mint and paprika).
I made my wrap filling at night and kept it covered in the fridge. On the morning of making the wraps add a dash of yogurt and mix well.
On the next day, I assembled the wrap, placing lettuce, filling, some thinly sliced cucumbers. You could play with flavors here and add anything from sour cream to onions.
I made 5 wraps and my daughter shared it with me for breakfast. She’s 2 and she loved it!

I think making this is a win-win as it yields 5 big wraps, which will be enough for 1 adult + 1 child.

You could always add in your favorite ingredients, play around with flavors and sauces. You should give this recipe a chance in your kitchen and you won’t regret it!

Breast milk VS. a Formula

So, I began thinking about this battle when I got pregnant with my lovely daughter.

Should I breastfeed ?

What age should I breastfeed till?

What if I get no milk?

How long will the milk stay?

All of these questions were crossing my mind DAILY. And to some questions I got answers to while other questions I got no answers until…. I delivered!

Trust me, you will get the answers to all of your “baby” related questions and doubts when you see and hold your little angel in your arms. Let me tell you a little about my experience …

I delivered my daughter via c-section an unplanned one, so once I got to see her eyes and little nose the nurses took her away into an incubator since she has swallowed lots of fluid. After I was moved to my room at the hospital I began pumping since I wasn’t able to hold my baby and feed her. For around 3 days I kept on pumping until I got to see her hold her and feed her. The first milk that came in was colostrum and it is more than gold. (I’ll get to that later post). So after 3 days I began directly feeding her, but I struggled a lot, my husband had to get my a breast shield so that my daughter could latch on. I literally cried when she used to latch on and began to feed.

Once we got home, the pain continued and I continued to feed using a shield. One day about 3 months later I suddenly decided that I will remove the shield. And so I did and to my surprise she latched On perfectly and it didn’t hurt anymore.

I continued feeding until 8 months old and then I tried using various formulas but, she refused all of them. I even got back to just pumping but I got frustrated and got back to direct feeding.

I didn’t bother trying to make her drink formula until she turned 1 and a half. But then she also refused.. so to this day I continue feeding her in the morning after she wakes up (like a pre-breakfast) and the second feed during her nap and the last feed before sleeping at night.

So that is all my tea.. now let’s get to the battle.

Breast milk or formula?

Let’s see what is in the breast milk;

  • Millions of live cells. These include immune-boosting white blood cells, as well as stem cells, which may help organs develop and heal.
  • More than 1,000 proteins that help your baby grow and develop, activate her immune system, and develop and protect neurons in her brain.
  • All that breast milk protein is made up of amino acids. There are more than 20 of these compounds in your milk. Some of them, called nucleotides, increase at night and scientists think they may induce sleep.
  • Over 200 complex sugars called oligosaccharides that act as prebiotics, feeding ‘good bacteria’ in your baby’s gut. They also prevent infections entering her bloodstream and lower her risk of brain inflammation.
  • More than 40 enzymes. Enzymes are catalysts that speed up chemical reactions in the body. The ones in your milk have jobs such as aiding your baby’s digestion and immune system, as well as helping her absorb iron.
  • Growth factors that support healthy development.1 These affect many parts of your baby’s body, including her intestines, blood vessels, nervous system, and her glands, which secrete hormones.
  • Vitamins and minerals  nutrients that support healthy growth and organ function, as well as help build your baby’s teeth and bones.
  • Antibodies, also known as immunoglobulins. There are five basic forms of antibodies and all of them can be found in your milk. They protect your baby against illnesses and infections by neutralising bacteria and viruses.
  • You may have heard of long-chain fatty acids because they play a pivotal part in building your baby’s nervous system, as well as aid healthy brain and eye development.
  • 1,400 microRNAs, which are thought to regulate gene expression, as well as help prevent or halt disease development, support your baby’s immune system, and play a role in remodelling the breast.

Now about colostrum.. it contains the same as the latter milk but it tailored to your baby needs. It is also called a “natural vaccination” because its levels of antibodies and white blood cells are so high. Your first milk needs to contain these so it can protect your baby from infections and diseases after she leaves the safety of your womb.

Now formula milk only contains what is mentioned on the package. It cannot simply cannot be compared or even put close to the breast milk!

It is your choice on how long you plan to breastfeed or if you plan to breast feed at all. But trust me, it is something that you will never NEVER regret in your life. You are giving you baby so much more by just giving them Breast milk! Don’t be insecure, you might even be called a cow! I know I did! But that made me happier and didn’t stop me from providing milk for my baby.

You should always consult with you doctor regarding how you should breastfeed, for easier latching etc. don’t be shy, we are all once mothers and we all go through this. You are not alone !

apart from breastfeed being good for your little one, there are tons of benefits for YOU mama!

  • When breast feeding your body releases prolactin which helps you relax and focus on your baby.
  • Also oxytocin is released which creates a strong bond between you and your baby. Without even trying!
  • also it helps you to recover from child birth more quickly as oxytocin aids in putting your uterus to its pre-pregnancy stage.
  • Breastfeeding will help you even years and years after you stop breastfeeding. It will protect you from getting breast or ovarian cancer.
  • It also prevents you from getting types 2 diabetes, rheumatoid arthritis, cardiovascular disease, as well as high blood pressure and high cholesterol levels.
  • Exclusive day and night breastfeeding delays your menstruation which protects you from unwanted pregnancies.

All in all, breastfeeding should be your only option. Forget those nasty formulas, they are unreasonably pricey, useless and have very less health benefits.

Levantine Dessert (Tamrieh)

Hello Mama’s!

Today I will be sharing with you one of the very special Levantine sweet which is called “Tamrieh”.

It is made out of a dough that has been rested in oil for 4 hours and semolina ! The original recipe calls for mastic powder since I didn’t have any on hand I didn’t use it. But you should definitely use it in your recipe.

Here is a step by step recipe

Add in the flour, salt and water into a deep bowl.
knead until your dough is smooth and not sticky
divide the dough into 3 balls (each ball will yield 4 pieces of tamrieh)
pour oil onto the dough and cover the dough in oil
into a pot pour water, sugar and mix till sugar is dissolved
add in the semolina
cook everything together until the mixture represents a porridge, add in mastic or rose water at this stage if using
pour the mixture out onto a dish and cover it once cooled
after 4 hours, take out one piece of dough
stretch out the dough with your fingers until very thin
carefully cut the dough into 4 piece
divide the semolina into 12 pieces
put out one piece of semolina mixture onto the dough and fold
fry the tamrieh in hot oil and place on a paper towel.
sprinkle powdered sugar on top and serve warm!

Levantine Dessert (Tamrieh)

  • 1 1/2 cups flour
  • pinch salt
  • 3/4 cup warm water
  • oil (for cover the dough + frying)
  • 3/4 cup semolina
  • 2 cups water
  • 3/4 cup sugar
  1. mix together flour, salt and water to form a soft dough

  2. divide the dough into 3 balls and cover well in oil. keep aside for 4 hour (room temp)

  3. prepare the semolina filling by mixing in a pot water, sugar and semolina. 

    add in flavorings at this stage. (rose water, mastic)

  4. roll out one piece of dough very thinly and divide into 4 parts.

  5. place a piece of semolina onto the center and fold, repeat for all dough.

  6. fry them in hot oil.

    serve with powdered sugar on top.

Batter-less Apple Cake

Hello Lovelies! Today I’ll be sharing with you a very strange yet delicious and easy to make apple cake which is absolutely batter-less! No eggs, No milk, no water.

Let’s Begin,

Mix together the dry ingredients: flour, semolina and sugar.

Shred apples and add cinnamon (you could use any toppings for the apples like brown sugar, coconut, nuts etc)

sprinkle some of the dry mixture into a baking pan.

top with a little apples.

again top with dry mixture and continue layering until all dry mixtures and apples are used.

Once all mixture is used, shred frozen butter on top and place into a heated oven until browned.

This is how it looks baked through. Yummm…

Cut into slices and serve as is or top with ice cream or cream !

Batter-less Apple Cake Recipe

  • 1 cup flour
  • 1 cup semolina
  • 1 cup sugar (you could use less or more)
  • 1 tbsp baking powder
  • 1/2 block frozen butter (enough to cover the top of the cake)

filling

  • 1.5 kg apples
  • 1 tbsp cinnamon powder
  1. mix well the dry ingredients

  2. shred apples and add cinnamon

  3. In a baking pan add a little of the dry ingredients and top with apples. continue untill all mixtures are used up.

  4. Bake in a preheated oven until top and bottom are browned.
