One-Pot Chicken Taco Bowl

Hello lovelies! Welcome back to my world. Today I’ll be sharing with you an amazing and super easy dinner idea that you and your family will love.

It is really comforting and warm, more suitable in the winter but in summer it works as well! The aromatic and tender chicken, fresh veggies, mixture of spices, beans, corn, cheese ooooh yumm!

Let’s get to the recipe shall we?

The first step is to dice up some onion and cook it in oil or butter until slightly translucent. Do not brown it.

To the onions add in your sliced chicken.

Can you see how tender the chicken is?? WOW!
To the cooked chicken add in red capsicum (you could substitute for any other color ). This is the stage where you add in your favorite spices and seasonings. I added salt, pepper, cumin, mixed spices, curry powder.
Once your chicken has a golden color, add in soaked and rinsed raw rice on top. Do not mix.
Add in chopped tomatoes to the rice.
Add in canned rinsed corn, or you could use freshly cooked or frozen corn.
Add Beans (I used canned but you could substitute for freshly soaked and cooked).
On top of everything add some grated cheese of your choice. Add in water/broth according to the rice type you’re using and voila!
Top it up with some sour cream and parsley.
